
Beef Taco Meat
This is great for rice bowls, soft corn or flour tortillas, hard taco shells or even an enchilada filling.
I make this almost weekly for my family. I almost always have all of these ingredients on hand, which makes this a staple in our house. Any of these ingredients can be added to taste because this is a very forgiving recipe. I make this different every time because I normally just sprinkle on the different spices until it tastes right, but this is a good base to start from!
*This can be GLUTEN FREE and DAIRY FREE if served with corn tortillas, gluten free brown rice, or even a gluten free quinoa*
Ingredients
- 1 pound ground beef
- 1 15-ounce can black beans, drained
- 1 15-ounce can sweet corn, drained
- 1 tablespoon lime juice
- 2 teaspoons course Celtic sea salt plus more to taste
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 teaspoons chili powder
- 1 teaspoons cumin
- Optional: you can get creative here and add diced or chopped vegetables like bell peppers, diced zucchini, and onions to add more color and nutrition to your main dish.
Directions
Brown ground beef in a large skillet on medium. If adding onion, add now with ground beef.
Drain corn and beans.
Once meat is mostly done, add in corn and beans and mix well. Option to add other veggies (peppers, zucchini) now and sauté with meat, corn and beans until cooked.
After meat is browned and corn and beans are mixed, add in lime juice and spices. Mix well.
Add any more seasonings to taste. Remove from heat.
Serve warm over rice, in corn or flour tortillas or hard taco shells or use to fill enchiladas.
Add salsa, sour cream, cheese, cilantro, and avocado or guacamole!
