Gaucamole

Guacomole

This is a fool-proof way to make guacamole. The tomato mixture shown above can be made in advance so when company comes over or when you are ready to eat and serve, you only have to slice and mash the avocado and add the tomato mixture. So easy and so good!

Ingredients

  • 3-4 avocados
  • 1 package cherry tomatoes
  • handful of cilantro, to taste
  • 1/2 purple onion, diced, or 1/4 cup (heaping) diced purple onion
  • 1/2 lime, juice only
  • 1/2 – 1 teaspoon very course Celtic Sea Salt (or use 1/4-1/2 teaspoon fine salt and add more to taste)

Directions

Dice cherry tomatoes in 1/2 or in quarter pieces.

Dice about 1/4 to 1/2 of a purple onion until you have about 1/4 cup diced.

Chop a bunch of cilantro. I typically use half to 3/4 of a large bunch.

Slice lime in half.

Combine cherry tomatoes, cilantro, onion, and 1/2 teaspoon sea salt in a small bowl. Juice 1/2 of the lime into the bowl and mix to combine. Taste and add salt if needed. Last time, I used a total of 1 teaspoon very course Celtic Sea Salt and it worked perfectly.

Cover and put in refrigerator until serving or set aside.

When ready to serve, mash desired amount of avocado in a small bowl. You can use 1 avocado and up to about 4, depending on how many you are serving.

The tomato mixture is enough for 4 large avocados. I typically use one or two avocados at a time so I don’t use the entire tomato mixture, but just add tomato mixture to taste. The tomato mixture can be kept for a couple days to use over time as long as it is not mixed with the avocado.

You can adjust flavor by adding as little or as much of the tomato mixture as desired.

Serve with tortilla chips, rice bowls, tacos, enchildadas, or fajitas.
