
Tomato Salsa
This recipe is from thepioneerwoman.com. I used to love reading her blog on those long winter days when my kids were little and we were stuck at home. She was so entertaining. My whole family loves this salsa. It is light and refreshing.
*This is DAIRY FREE and GLUTEN FREE*
Ingredients
- 1 28 ounce can whole tomatoes with juice
- 2 10 ounce cans diced tomatoes
- 2 4 ounce cans green chilies
- 1/4 cup chopped onion, heaping
- 1 clove garlic, or heaping 1/2 tsp minced garlic
- 1/2 jalapeno, seeds removed
- 1/4 teaspoon sugar or rapadura
- 1/4 teaspoon salt, heaping, plus more to taste
- 1/4 teaspoon cumin, heaping
- 1 cup cilantro
- Juice from 1/2 of 1 lime
Directions
Combine ingredients in large blender.
Pulse 5-10 times so the mixture is mixed, but not puréed. You’ll want some texture in the final result.
Test and alter flavor as needed. You may need to add salt about 1/2 teaspoon at a time if your canned tomatoes don’t have any added salt or citric acid. Pulse just once after adding salt and just enough to mix it. You can pulse about 10-15 times before it gets too puréed.
If it still needs more flavor after adding salt, but you’ve pulsed it 15 times, remove from blender and add salt (or whatever flavor you want) and then mix with a spoon.
This tastes best after being refrigerated for an hour.
