
Pork Taquitos
This recipe inspiration is from skinnytaste.com. She uses shrimp and other yummy ingredients that I would have loved, but I was trying to feed my hungry boys who really like the store bought frozen taquitos. So… I changed the ingredients to fit their more manly taste buds. This is also a great use of leftover taco meat and refined beans. These turned out really good and tasted a lot like the frozen ones! Pork (or ground beef) and Refried Bean Taquitos
Ingredients
- 1 pound pulled pork carnitas or ground taco meat (I used leftover pulled pork)
- 1 can refried beans or 2 cups homemade refried beans
- 8 ounces shredded cheese
- 1 jar salsa or homemade salsa
- 12 corn tortillas
- Avocado oil for spraying
- optional: cilantro, avocado/guacamole and sour cream for dipping
Directions
Preheat oven to 400 degrees.
Line a baking sheet with parchment paper.
Mix in a bowl, cooked pork carnitas or cooked ground taco meat, with refried beans (see below on how to make your own), 8 ounces shredded cheese, and half a jar of salsa. Adjust any ingredients to taste. You can add cilantro if you have any.
Place 4 corn tortillas in the microwave under a damp paper towel and heat for 30 seconds. Remove from microwave and fill with meat mixture and roll into taquito shape. Place on parchment lined paper. Repeat until you’ve used all the mixture and tortillas.
Spray the tortillas on the top and bottom with avocado oil and place seem side down.
Bake for 15 minutes or golden and crisp.
Dip with remaining salsa, guacamole and sour cream.
