Salsa – Restaurant Style

Tomato Salsa

This recipe is from thepioneerwoman.com. I used to love reading her blog on those long winter days when my kids were little and we were stuck at home. She was so entertaining. My whole family loves this salsa. It is light and refreshing.

Ingredients

  • 1 28 ounce can whole tomatoes with juice
  • 2 10 ounce cans diced tomatoes
  • 2 4 ounce cans green chilies
  • 1/4 cup chopped onion, heaping
  • 1 clove garlic, or heaping 1/2 tsp minced garlic
  • 1/2 jalapeno, seeds removed
  • 1/4 teaspoon sugar or rapadura
  • 1/4 teaspoon salt, heaping
  • 1/4 teaspoon cumin, heaping
  • 1 cup cilantro
  • Juice from 1/2 of 1 lime

Directions

Combine ingredients in large blender.

Pulse 10-15 times.

Test and alter flavor as needed.

This tastes best after being refrigerated for an hour.
