Apple Cider Vinaigrette

I used to call myself the condiment queen. I had so many condiments that I had trouble finding space in my refrigerator. Lately, I’ve bene working on making my dressings from scratch because it is cheaper and they often times taste better. I still keep dressings on hand for those days when I don’t have time to make dressing though. This dressing is so simple, keeps in the fridge for a long time and makes a simple fruit, nut, cheese salad taste really good. Don’t be shy on the honey – I had to add more last time I made it.

Ingredients

  • 3 tablespoons lemon juice
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1/2 teaspoons sea salt
  • 1/3 cup olive oil (not extra virgin)

Directions

Combine all ingredients in a bowl and mix to combine. Add honey or olive oil to taste if desired.

This dressing tastes best on a kale or spinach salad with apples, feta and pecans or walnuts or pears, goat cheese, and nuts of choice.

Use immediately or store for a couple weeks in refrigerator.
