Cheese-Its

I made these more often when my kids were little and at home all of the time. I really should get back to making them because they really do taste better than the box. The flavor is better and they have a better consistency. They do taste best right out of the oven, but we like them for a few days after that too.

Ingredients

  • 6 ounce block Colby Jack cheese
  • 1/4 cup salted sweet cream butter
  • 3/4 cup all purpose flour
  • 1/2 teaspoon sea salt
  • 1 tablespoon milk

Directions

Preheat oven to 350 degrees.

Put cheese, butter, flour and salt in food processor. Pulse until crumbly.

Add 1/2 tsp milk, then more if needed.

Turn out on silicon mat and knead into a ball.

Roll out dough to desired thickness with a rolling pin.

Use knife and cut into squares.

Place squares on parchment or silicon lined cookie sheet. Poke holes in center of each square with the bottom of a wooden skewer.

Bake 12-15 minutes or until slightly browned. Enjoy warm or let cool and store.
