




Zucchini Boats
Zucchini Boats are my husband’s favorite way to eat zucchini. Mine turn out different every time I bake depending on what I have on hand. They can be eaten as a side or a main dish. My recipe is a base recipe so you can run with it however your taste buds lead!

Ingredients
- 2 zucchini, cut in half, longways
- 1 tomato
- 2-4 tablespoons yellow onion
- 1/2 teaspoon minced garlic
- 1/2-1 teaspoon salt, to taste
- 1/4-1/2 teaspoon pepper, to taste
- 1 tablespoon plus 1/4 cup parmesan
- 1 tablespoon olive oil
- basil to taste
- optional: 1/4 cup mozzarella, 1/4 cup bread crumbs, sausage
Directions
Preheat oven to 350 degrees.
Cut zucchini in half, longways. Slice a small sliver off the bottom of the boat so that your boat will sit flat in your baking dish. Scoop out zucchini and seeds to form a boat. Place in a greased baking dish or on a parchment lined cookie sheet.
Dice the zucchini that was scooped out of your boat and add to a medium bowl.
Dice tomato and onion and add to the medium bowl.
Add garlic, salt, pepper, 1 tablespoon parmesan, basil and half of the mozzarella if desired to bowl and mix. Season to taste.
Drizzle part of the oil on the zucchini boat and add the remaining oil into the mixture.
Divide the mixture into 4 parts and put in each zucchini boat. If desired, top with a sprinkling of bread crumbs. Top with 1/4 cup parmesan and remaining mozzarella.
Bake for 30-45 minutes, depending on size of zucchini. You can broil for a few minutes at the end of baking to create a more brown crust.
**This recipe can be altered. Add sausage to make a main dish. You can change up the flavor to make Mexican boats as well. Summer yellow squash works well for a boat too.
