Vinegar Kimchi

Kimchi 

Ingredients

  • 1 spiralized cucumber
  • 1 teaspoon course sea salt
  • 2 garlic cloves
  • 2 tablespoons purple onion
  • ¼ teaspoon ginger 
  • 2 tablespoons rice vinegar
  • 1 teaspoon red pepper flakes
  • 2 teaspoons honey

Directions

Sprinkle salt on the spiralized cucumber and let sit for 30 minutes at room temperature.

Combine remaining ingredients in a small bowl.

After 30 minutes, drain water from cucumbers and wring out with a paper towel.

Mix the cucumbers with the marinade.

Cover and refrigerate 12 hours before serving. Lasts 5 days in the fridge.
