Tomato Corn Salad

This recipe is from therealfooddieticians.com and is great as a summer side salad, as a main salad topped with shrimp or chicken and you can even add some quinoa to make it more hearty. I changed this recipe a little bit just because I wanted more dressing and I didn’t have a jalapeño or corn on the cob. I’m sure their version is better, but sometimes I just go with what I have on hand. This still turned out delicious! I didn’t get a picture until this was almost gone so that bowl was all that I had left!!

Tomato Corn Salad

Salad Ingredients

  • 1 pint cherry tomatoes
  • 1 1/2 cups frozen fire roasted corn or 1 1/2 cups corn with option to be roasted
  • 1 diced bell pepper (I like yellow or orange)
  • 1/2 cup diced purple onion
  • 1 avocado, diced
  • 1 bunch cilantro, chopped
  • 1 tablespoon avocado oil (if roasting corn)
  • Optional: 1/2 cup sprouted and cooked quinoa, and shrimp or chicken, and sour cream

Dressing Ingredients

  • 4 tablespoons avocado or olive oil
  • 4 tablespoons lime juice
  • 2 garlic cloves, finely minced or 1 teaspoon minced garlic
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon sea salt
  • 1/4 teaspoon pepper

Directions

Roast corn in a skillet in avocado oil until just charred, about 5 minutes. Set aside and let cool. If using frozen corn, let thaw.

Chop vegetables (tomatoes, bell peppers, onions, and cilantro) and add to a medium size mixing bowl or salad bowl for serving. Add cooled corn or thawed frozen corn.

Mix all dressing ingredients (avocado oil, lime juice, garlic, chili powder, salt and pepper) in a glass measuring cup or small bowl. Whisk well with a fork or whisk.

Pour dressing over vegetables and mix well. Add salt and pepper to taste. You can add cooked quinoa to this to make it more hearty too.

If not serving right away, place covered in refrigerator. Wait to add avocado until just before serving.

Remove from fridge and serve cold or serve right away and add avocado.

This is really good the day of and as leftovers. Try adding roasted shrimp and a dollop of sour cream to make it a full meal.
