Roasted Beets
I think this was originally from Ina Garden. Her version is really delicious, but this is still really good and simplifies it. I’ve been making beets since we got them one time in a CSA and we love them. Next time I make these, I’ll update the amounts, but in the meantime, go to Ina Gardens site linked above and she has them written out.
*This is DAIRY FREE and GLUTEN FREE*
Ingredients
- 3 -6 large beets
- extra virgin olive oil
- fresh or dried thyme
- salt and pepper
- Optional: Splash with about 1 tablespoon each orange juice and raspberry vinegar
Directions
Peel and chop beets.
Sprinkle on salt, pepper and thyme.
Drizzle with olive oil and mix.
Bake at 400 degrees for 35-40 minutes.
