

Grandma’s Country Green Beans
My dad grew up on a farm that my grandma still lived on when I was little. I still remember her kitchen, the smell of her house and downstairs library, and I especially remember these green beans. The soil in Indiana was better than Texas so these green beans were really good. I don’t have her recipe, probably because she didn’t have one, but I’m pretty sure these are close to what she used to make.

Ingredients
- 1 pound green beans, cut and ends trimmed
- 6ish slices bacon, chopped roughly
- 1 onion, diced
- 1 tablespoon course sea salt plus more to taste
- 1/4 teaspoon pepper plus more to taste
- 1 teaspoon minced garlic plus more to taste
- Optional: 1/8 teaspoon cajun seasoning or seasoning/herbs of choice and more to taste
- 32 ounces (or just enough to cover) chicken bone broth or broth
Directions
Sauté bacon, onion and garlic in a stockpot big enough to fit your beans and broth.
Add green beans, salt and pepper and stir to combine.
Add chicken broth. Bring to a boil.
Once boiling, turn down to simmer and simmer about an hour or until green beans are tender.
Taste and adjust seasonings as needed. Add optional Cajun seasonings or any of your favorite herbs/seasoning if they still need more flavor!
