Creamy Cucumber Salad

Each summer, we have an abundance of cucumbers (well, except this summer, sadly) and I’m always looking for more ways to eat them. I stumbled on this creamy cucumber salad recipe and it was a hit. It is from therealfooddieticians.com and is even dairy free. It tastes great on a warm summer evening. I hope you enjoy!

Creamy Cucumber Salad

Ingredients

  • 2 English cucumbers or approximately 4 cups of thinly sliced cucumbers
  • 1/2 teaspoon course Celtic salt plus more to taste
  • 1/2 red onion, sliced thin
  • 1/3 cup avocado oil mayonnaise or homemade
  • 1 1/2 tablespoons white wine vinegar
  • 1 teaspoon honey, plus more to taste
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon pepper
  • 1/2 teaspoon dried dill

Directions

Slice cucumbers as thin as possible.

Place in a colander and sprinkle with 1/2 teaspoon salt. Mix around so all the slices get a little salt on them.

Let cucumbers and salt sit for 15-20 minutes so some of the liquid drains out.

Meanwhile, in a small bowl, combine mayo, vinegar, honey, garlic powder, pepper and dill. Whisk to combine.

Pat dry the cucumbers with a paper towel and add to the bowl of dressing, along with the sliced onion. Mix well.

Taste and adjust seasonings as desired, maybe by adding salt or honey to taste.

Serve or you can let sit for while to let the flavors combine.
