Broccoli Cauliflower Salad

This is from therealfooddieticians.com and is one of my husband’s favorite sides. My kids don’t love it, but I know they will someday. Update… They actually eat this now! It’s not their favorite side, but they like it. It is equally sweet and savory and all around delicious. It feels like good ole Midwestern barbecue food to me.

This is a special treat because I typically cook my vegetables in a lot of butter or oil in order to aid in digestion. Certain vegetables such as tomatoes and cucumbers are okay to consume raw if you can tolerate it, but most need to be cooked with lots of fat.

Ingredients

  • 3-4 strips bacon, chopped, or 1 bag uncured bacon pieces, pictured above
  • 3/4 cup mayonnaise
  • juice of 1/2 lemon or 1 1/2 tablespoons lemon juice
  • 2 teaspoons honey
  • 1 teaspoon apple cider vinegar or white wine vingar
  • 1/4 teaspoon pepper
  • 2 cups broccoli, in bite size pieces
  • 2 cups cauliflower, in bite size pieces
  • 1 cup halved purple grapes
  • 1/3 cup sliced red pickled onion
  • 2 green onions, sliced
  • 3 tablespoons sunflower seeds

Directions

Place broccoli, cauliflower, bacon, sunflower seeds, red pickled onions, green onions and grapes in a large bowl.

Mix mayonnaise, lemon juice, honey, vinegar and pepper in a large liquid measuring glass with a spout or any bowl. Combine dressing mixture well.

Pour dressing over broccoli mixture and mix well. Refrigerate for 2-3 hours.

Serve chilled.
