Baked Rice

No Rice Cooker? No problem! This will cook rice just right in any oven safe dish with a lid. This is an old trick of my mom’s and I use it weekly. The rice comes out perfect every time and I don’t have to buy another kitchen appliance. It’s quick and easy for weeknight rice bowls.

** For better mineral absorption and for better digestion, try soaking your rice first. See how-to soak rice. You’ll have to plan ahead because rice should be soaked 8-24 hours before cooking.**

Ingredients

  • 1 1/2 cups white or brown rice
  • 3 cups chicken bone broth or water

Directions

Preheat oven to 425 degrees.

Place rice and water in a corning ware dish with lid or crock with lid that is oven safe.

Bake for 1 hour, checking for doneness around 45 minutes.
