






Minestrone
This recipe is from a mail order recipe subscription for kids called, Radish Kids. I’ve adapted it a little bit to make it easier and in order to use whole wheat pasta. My whole family loves this and it is great to feed a crowd as well. I especially love it because of the added zucchini for a little extra nutrition. Enjoy!

Ingredients
- 1 onion
- 1 large carrot
- 3 garlic cloves
- 1 large zucchini
- 1 pound ground sausage
- 1 ½ teaspoon course sea salt
- ½ teaspoon pepper
- 1 15oz can white beans
- 4 – 6 cups chicken broth
- 2 cans diced tomatoes
- 1 teaspoon dried dill
- 1 teaspoon dried oregano
- 1 cup whole wheat pasta, Bionaturae whole wheat sourdough pasta works great here, or traditional Ditalini or Acini de Pepe pasta
Directions
Dice onion, carrot, zucchini, and mince the garlic cloves.
Brown sausage for a few minutes on stove in a large soup pot.
Add onion, carrot, zucchini, garlic, salt and pepper. Cook, stirring occasionally until veggies are soft, about ten minutes.
Add broth, drained beans, tomatoes, basil, and oregano to pot. Start with 4 cups broth.
Bring soup to boil over high heat.
Add pasta to pot and reduce heat to medium. Stir occasionally to prevent sticking.
Simmer until pasta is tender and soup has thickened, about 15 minutes. If it’s too thick, add more broth as needed.
