Bob’s Chicken Potato Chip Casserole

This was one of my father in law’s favorite casseroles. His friend at work used to eat it for lunch so my mother in law got the recipe from his friend’s wife. My husband remembers eating this as a kid too. He did remember more potato chips and cheese so he added some onto his serving. Next time, I’m going to add a chopped and partially cooked russet potato for a little something extra.

Ingredients

  • 4 cups cooked chicken
  • 2 tablespoons lemon juice
  • 3/4 cup mayonnaise
  • 3/4 cup cream of chicken soup
  • 1 teaspoon course sea salt
  • 2 cups chopped celery
  • 2-4 hard boiled eggs (I use 2 for us because my son doesn’t like eggs, but boiled 4 so my husband could top his with extra)
  • 1/2 cup onion

Topping Ingredients

  • 1 cup grated cheddar, medium or sharp, your choice
  • 2/3 cup sliced almonds
  • 1/2 cup crushed potato chips

Directions

Preheat oven to 350 degrees.

Combine ingredients and place in a 9X13 baking dish.

Combine topping ingredients in a small bowl.

Spread topping ingredients on top of casserole. Bake or refrigerate to bake later.

Bake uncovered for 25 minutes, if at room temperature. It may need a little longer if it has been refrigerated.
