Barbecue Chicken and Veggies in a Foil Packet

This was adapted from www.skinnytaste.com. This is the perfect weeknight recipe for my family of 5 with a baked potato or sweet potato on the side. It comes together so easy because it is made with so few ingredients that I almost always have on hand. We used to eat this with Sweet Baby Rays Barbecue Sauce and my kids liked it a lot more. Now, I use this barbecue sauce. It isn’t as sweet, but it has better ingredients. I still need to find a better replacement because it has some ingredients that I try to avoid. There are a couple I have seen that are more clean, but have yet to try them. I hope you enjoy!

Ingredients

  • 2 pounds (give or take) boneless skinless chicken thighs (you can use breast meat as well, but you will need to adjust cooking time for thicker pieces of chicken)
  • 1 15 ounce bag or 2 cups frozen organic mixed veggies
  • 1 1/2 teaspoons course sea salt
  • 3/4 teaspoon smoked paprika
  • 3/4 teaspoon garlic powder
  • 1 cup favorite barbecue sauce
  • baked or sweet potatoes for serving

Directions

Preheat oven to 425 degrees.

On a large cookie sheet, layout one piece of aluminum foil horizontally and one vertically on top of the other with the edges going beyond the cookie sheet.

Place chicken and veggies on top of foil.

Mix the spices together in a small bowl.

Sprinkle chicken and veggies with the spices and then top with barbecue sauce.

Close up foil tightly into a large foil packet.

Bake for 25 minutes and check the chicken to see if it is done. If chicken isn’t done, loosen the foil packet a little and bake for 5 more minutes or until chicken is cooked through. Depending on how full you make your packet and the size of your chicken, this may take 35-40 minutes. Just make sure to check that the chicken is no longer pink on the inside before removing from the oven.

Serve beside or on top of a baked russet or sweet potato. I like to cook/bake potatoes in my crock pot all day so they are warm and ready when we are ready to eat. See my post on the best baked russet or baked sweet potato crock pot hack!
