

Air Fryer Breaded Chicken Nuggets
Chicken is so hard for me to cook well on the stove or in the oven without drying it out. We prefer grilled chicken, but my husband does all of the grilling so on busy weeknights and when he is gone, I need an alternative to grilling. I adapted this recipe to fit our dietary needs and because my daughter wanted a chicken Caesar salad and my husband was at baseball practice. These little nuggets tasted so good alone and in our salad! They are an air-fryer recipe that I adapted from skinnytaste.com and it worked great. They were fairly easy to make and all of my kids liked them. We even have leftovers that could easily be frozen, but I think ours will get eaten before that happens.
Ingredients
- 3 pounds chicken, cut into nugget sized pieces.
- 1 1/2 cups homemade seasoned sourdough bread crumbs or store bought
- 1/2 cup cup grated parmesan cheese
- avocado oil for coating
- salt and pepper for sprinkling
- olive oil or avocado oil for drizzling and spraying
Directions
Cut chicken into nugget size pieces and place in a large bowl.
Sprinkle chicken very lightly with salt and pepper.
Drizzle a little avocado oil over chicken and mix to combine. Once it is shiny, you’ll have enough. You really don’t need a lot, but just enough to lightly coat the chicken.
In a separate bowl, mix the bread crumbs and parmesan cheese.
Add the bread crumb mixture to the chicken and mix it so that the bread crumbs are coating the chicken.
Place chicken pieces on air fryer basket so they are not touching. Lightly spray with an oil spray. You will probably not have enough space for all of your chicken. I had to do 3 batches.
Turn the air fryer onto 400 degrees.
Air fry for 4 minutes one one side, flip and fry for another 4 minutes. Check for doneness.
Once done, place on a plate to cool.
Repeat with next batches.
Serve with a sauce, on salad, or even on some little rolls like a sandwich!
