
Pot Roast from Shady Grove Ranch
Jerica at Shady Grove Ranch is an excellent cook! Shady Grove Ranch meat, chicken, eggs, and well, everything they sell, is delicious and raised the right way. Go check out their website. Once you eat their meat, you will never turn back! We have been buying from them for about 13 years. This is her roast recipe, except that I threw in potatoes and used green beans instead of carrots. The flavor is excellent and it’s a great, easy, weeknight meal. Enjoy!
Ingredients
- 3-5 pound beef roast
- 1 onion, chopped
- 4 cloves garlic, or 2 heaping teaspoons minced garlic (don’t be shy!)
- 1 1/2 pounds green beans, or carrots (this was so good with green beans!)
- 3-4 celery sticks
- 1 1/2 pound small red potatoes
- 2 teaspoons sea salt
- 1/2 teaspoon pepper
Directions
Place roast in crock pot.
Place chopped onion, celery, washed potatoes (no need to chop), and green beans on top of and around roast.
Add and sprinkle around garlic, salt and pepper.
Let cook in crock pot on low for 8 hours, or high for 6 hours.
When meat is fork tender, remove and shred with a fork. Place meat back in crock pot with juices and vegetables.
Serve warm.
