



Oven Roasted Beef Tenderloin
This is one of my mom’s recipes that is a family favorite. She just made it while we were at her house in Vail so I had to get some pictures of Nana’s kitchen. My oldest son Jack ate 8 slices after a long day of skiing and sledding. He did have some help from the cousin team and the parents and grandparents too. Needless to say, there wasn’t any left after dinner! We eat this for Christmas dinner and it is always a hit. It is sure to impress!
**This is GLUTEN FREE and DAIRY FREE**
Ingredients
- 2 lbs beef tenderloin
Sauce
- 1/4 Cup vegan/organic Worcestershire Sauce, or Bragg’s coconut aminos (I haven’t tried this in the recipe yet, but every time I have used it as a substitute, it has worked well)
- 3/4 Cup Organic Ketchup
- 1/2 teaspoon minced garlic
- 8 ounces mushrooms
Directions
Preheat oven to 400 degrees.
Mix sauce ingredients.
Place beef tenderloin in glass baking dish or on cookie sheet lined with parchment paper.
Pour sauce over meat or heat in saucepan over low heat until heated through and serve on the side.
Bake tenderloin for 20-40 minutes or until cooked to your liking. Let rest for 10 minutes.
Slice and serve.
