Beet Kvass

Beet Kvass is a traditional Ukrainian probiotic drink that is good for your health and your digestion. It is definitely an acquired taste and for optimal results, should be drank with each meal or 1-3 times per day. You only need a few ounces at time. I drink it once or twice per day and I can still feel the benefits. This is a cost effective and easy way to add in some natural, organic probiotics to your diet. I found this recipe on a video on www.westonaprice.org. I typically double this recipe so I have two jars full.

Beet Kvass

Ingredients

  • 1 beet, roughly chopped, skin on
  • 1 clove garlic
  • 1 heaping teaspoon course Celtic sea salt
  • filtered water

Directions

Remove greens from beet and wash.

Chop beet into approximately 1/2 inch chunks, leaving skin on.

Place beet chunks in a clean quart size ball jar or something comparable. It should fill the jar about 1/3 of the way.

Add 1 clove of garlic and 1 heaping teaspoon course sea salt.

Fill the jar with filtered water.

Stir and close jar with an airtight lid.

Let sit at room temperature for 2-3 days. Open lid and stir once per day during the 2-3 day period.

After a couple days, you will see bubbles appear. That is normal!

Drain beets and garlic from kvass and store the fermented kvass in the refrigerator in an airtight container such as a ball jar with a lid.

Drink a couple ounces with each meal or 1-3 times per day.

**do not use grated beets because it will cause the fermentation to happen too quickly and could produce alcohol instead of lactic acid.
