





Sourdough Pasta
This recipe is from www.pantrymama.com. The entire process was definitely time consuming, but it turned out really good! My kids even ate the noodles without complaining! They are more thick than a store bought noodle, but other than that, the taste wasn’t much different. The part that took the most time was rolling out the dough so a pasta maker would save time and may help make the noodles more thin. I had to use A LOT of elbow grease to get the dough thin enough so I could just barely see through it. I look forward to trying this again – I think I’ll make ravioli next time! Also, I should have doubled this for my family of 5!!
Sourdough Pasta
Ingredients
- 100 grams active sourdough starter
- 250 grams organic, unenriched bread flour
- 2 eggs
Directions
Weigh out 250 grams of bread flour and then pour onto a wooden board or whatever you use for kneading bread.
Make a well in the center of your flour.
Crack 2 eggs into the well and add the sourdough starter to the well.
Gently beat the eggs (I used a fork) with the sourdough starter and gradually add into the rest of the flour.
Combine until dough forms and then shape into a ball. Mine was pretty dry so I didn’t need to add any flour, but if yours is sticky, just add some flour.
Let dough set for 30 minutes (this will still create a delicious pasta, but won’t be fermented) or put in your refrigerator to slowly rise and ferment overnight or up to 24 hours for a true sourdough pasta.
After letting the dough sit, remove from refrigerator and let it reach room temperature.
(If available, use pasta maker as per instructions)
Or, roll out the dough as thin as possible, making sure you can see through it slightly.
Once rolled out pretty thin, cut with a pizza cutter to the desired shape. The picture above was bow-tie pasta. Once shapes are cut, pinch middle with your fingers to make into bow ties. Or, slice in long strips to make fettuccine.
Let dry for at least 30 minutes or all day until ready to use.
Bring salted water to a boil and let boil for 2-5 minutes or until done. Pasta will float when it is done. It doesn’t take as long to boil as store bought pasta.
Drain (and add some butter) and top with your favorite sauce!
