Dark Chocolate Date Bark

Do yourself a favor this holiday season and make this date bark! It has no added sugar (except less than 1 gram for the whole recipe from the peanut butter I use) and you would never know it because it is sweet and salty and delicious. It is from www.eatingbirdfood.com and I didn’t change a thing, but I just had to share! It is gluten free and dairy free and it keeps well in the freezer.

Links are available to my favorite ingredients, which are generally whole and organic, have been thoroughly vetted for cleanliness, but with some exceptions for my teenagers’ taste preferences; however, you’re welcome to substitute them with your preferred ingredients.

Dark Chocolate Date Bark

Directions

Place parchment paper on a tray or plate that will fit in your freezer.

Split dates open without cutting all the way through (remove pits if not already removed) and lay flat on the parchment paper with the inside facing up. Line up in 2 rows of 6 and press down on each one and press them together.

Melt peanut butter a little until pourable in the microwave (in two or three 30 second increments) or on the stovetop and drizzle over the top of the dates. Use a spoon to spread evenly.

Chop nuts of choice and sprinkle over the peanut butter layer.

Melt the chocolate chips and coconut oil together and mix well until pourable. Drizzle over the layer of chopped nuts and spread with a spoon.

Sprinkle salt over the top of the chocolate.

Place in the freezer for 15 minutes or until hardened.

Remove from freezer and chop into 10-12 pieces. If they break when you chop, let them sit out for a few minutes to soften slightly and then try chopping again.

Enjoy!

Store in the freezer and eat them anytime you want something delicious and nourishing!
