

Pickled Onions
I keep these on hand in the refrigerator almost all of the time. They really spruce up eggs, chicken or egg salad, burgers, and sandwiches. They are a refrigerator staple!
*This is DAIRY FREE and GLUTEN FREE*
Ingredients
- 1 whole purple onion
- 1 tablespoon course sea salt
- white wine vinegar
Directions
Slice onion in thin, long slices. Place in air tight jar.
Sprinkle approximately 1 Tablespoon celtic sea salt or course sea salt over onions.
Pour white vinegar over onions about half way up the onion slices.
Let sit for a couple of hours and then place in refrigerator. Onions are best the next day.
Use on eggs, salads, sandwiches, burgers, or anything that sounds good.
