Sweet Balsamic Vinaigrette

This was served at a women’s bible study lunch at a friends house years ago. I’ve always wanted a house dressing and after tasting this, I think I can safely say this is my “house” dressing! I added more honey and tweaked the salt and pepper amounts from the original recipe. Lately, I’ve had to tweak ingredient amounts in some of my recipes. I don’t know if my taste buds have changed or if different brands have slightly different flavors that change the outcome of a recipe. When making this, add the honey and salt and pepper a little at a time to fit your taste.

Ingredients

  • 1/2 cup plus 2 tablespoons extra virgin olive oil or 10 tablespoons extra virgin olive oil
  • 1/4 cup balsamic vinegar or 4 tablespoons balsamic vinegar
  • 1 tablespoons plus 2-3 teaspoons honey (to taste)
  • 2 teaspoons Dijon mustard
  • Optional: 2 tablespoons chopped green onions
  • 1/4 teaspoon course sea salt
  • 1/8 teaspoon pepper

Directions

Mix all ingredients except green onions in salad dressing jar and shake.

Optional: add green onions to dressing or for longer shelf life, add them to salad instead of dressing.
