Soaked Oatmeal

For proper absorption of minerals and for better digestion of oats, try these soaked oats! It requires a little pre-planning, but it is still a really easy breakfast option. There is a slightly sour taste from the yogurt, but my kids still enjoy these.

Soaked Oatmeal

Ingredients

  • 2 cups old fashioned, rolled oats (this serves 2-3, you can double, or cut in half)
  • 2 cups filtered water
  • 4 tablespoons plain, grass-fed, organic yogurt (or buttermilk, lemon juice or cider vinegar, we prefer yogurt)
  • 2 cups whole milk
  • pinch of salt
  • pad of butter
  • 2 teaspoons vanilla extract
  • 2 tablespoons maple syrup plus more to taste

Directions

Add 2 cups oats to a bowl that can be covered. I typically use the pot that I plan on cooking them in and just put the lid on.

Add 2 cups filtered water and 4 tablespoons plain yogurt.

Cover bowl or vessel and let sit covered 7 hours or overnight. I typically do overnight so they are ready to go in the morning.

When ready to cook, add 2 cups whole milk and a pinch of salt.

Turn heat to medium and cook until desired consistency.

Turn heat to low and add butter, vanilla and maple syrup. Add more maple syrup to taste.

Divide into bowls and let your kids add as much maple syrup as they want. This is plenty sweet for one of my children, but my other two add more maple syrup.
