Waffles or Pancakes 

From thepioneerwoman.com. I have tried to omit or change ingredients in this recipe because 4 eggs seems like a lot and so does the amount of vanilla extract. These just don’t work any other way; the pioneer woman really has this one down. Instead of limiting eggs, we just use the leftover yolks in our scrambled eggs and my oldest doesn’t like eggs so I figure this is one way to sneak them in his diet. These take awhile to cook on the cast iron griddle and you have to change your heat from low to simmer to in between to get the right amount of browning and doneness, but be patient, they are well worth the wait.

Ingredients

  • 2 cups all-purpose flour
  • ¼ cup heaping (piping) sugar
  • 1 tablespoon baking powder
  • ½ teaspoon course sea salt
  • 1 ½ cups whole milk
  • 1 tablespoon + 1 teaspoon vanilla extract
  • 2 large eggs + 2 egg whites
  • butter, for cooking

Directions

Mix flour, sugar, baking powder, and salt in a large mixing bowl.

Add milk, vanilla, and eggs. Mix.

For waffles

Heat waffle iron, spread butter on waffle iron.

Add ¼ cup of mix into waffle iron and let cook.

For pancakes

Heat griddle on low.

Place a pad of butter on griddle, let melt and sizzle and then drop ¼ cup mixture onto griddle and cook on first side until bubbles appear.

Flip and cook on second side until browned. Flip again if needed until both sides are done.

You will have to adjust griddle between low and simmer to get them just browned and not burnt, but still done.
