

Honey Granola
My kids don’t like nuts in their granola, but this is still good and crunchy without the nuts. It is so easy, but oven temperatures seem to vary so be sure not to over-bake it. It keeps for a long time and tastes great with yogurt, fruit and maybe a little extra honey drizzled on top. I have made it with coconut sugar and 💯 unprocessed, organic and unrefined cane sugar (our preference because it won’t spike your blood sugar and is not processed) and both were sweet enough for even my sweet toothed, picky eaters. The brown sugar version is really good too though!
*** Make this sprouted by using One Degree sprouted rolled oats. These taste delicious and makes this granola more digestible! I use them for oatmeal and granola and granola bars.

Ingredients
- 2 large egg whites at room tempurature
- ¼ cup honey
- ¼ cup coconut oil
- 1/2 cup light brown sugar or 2/3 cup or more to taste of Rapadura or Panela Sugar (100% unprocessed, organic and unrefined cane sugar)
- 1 tablespoon pure vanilla extract
- 3 cups old fashioned oats or sprouted rolled oats
Directions
1. If using a liquid form of honey and coconut oil, combine all ingredients and go to step 5.
2. If your coconut oil and honey is in solid form, then place coconut oil, honey, Rapadura (or sugar of choice), and vanilla extract in a small pan on stove. Heat on low just enough to melt ingredients and mix to combine. **If using unrefined cane sugar, start with 1/2 cup and add more to taste. Last time, I used 2/3 cup and it was perfect.
3. Remove from heat and add oats. Mix a little bit in order to slightly cool the mixture.
4. Add the egg yolks and mix well to combine.
5. Spread evenly on a parchment lined baking sheet.
6. Bake at 325 degrees for 10 minutes and then flip and bake 5 more minutes.
7. Mix up well on the sheet pan and bake for 5 more minutes or a little longer until browned slightly. You may need to bake for 5 more minutes if not browned enough.
Mixture will be soft, but will get crunchy as it sits.
Store in an airtight container.
