Whole Spelt Chocolate Chip Zucchini Bread

This is adapted from alexandracooks.com. Her recipe is delicious, but I made some modifications by trying whole spelt flour, coconut sugar, butter and I added some semi-sweet chocolate chips. I love this about sweet breads – it is so easy to make changes for what you have on hand or just for fun to see if you can make it a whole grain sweet bread! The options in parenthesis are the original recipe. We really enjoyed the whole spelt/coconut sugar/butter option, but the original with all-purpose flour may be crowd pleasing. **update** We also tried it with whole wheat einkorn and we enjoyed that too! It was a toss up in my family between the whole spelt and the whole wheat einkorn. Up to you! Enjoy!

Ingredients

  • 2 cups whole spelt flour or 227 grams, (or 2 cups whole wheat einkorn flour, or 2 cups all-purpose flour)
  • 3/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon course Celtic sea salt
  • 1 1/2 cup coconut sugar, (or 1 cup brown sugar and 1/2 cup pure cane sugar)
  • 3/4 cup salted butter, or 1 1/2 sticks salted butter, (or for diary free option: expeller-pressed canola oil works here too)
  • 1 teaspoon vanilla extract
  • 2 eggs, lightly beaten
  • 2 1/2 cups grated zucchini
  • 1/4-1/2 cup semi-sweet chocolate chips, optional

Directions

Preheat oven to 350 degrees F.

Grease a large loaf pan. I used a 10×5 and greased it with butter.

Grate zucchini and set aside in a colander to drain. No need to squeeze out liquid.

Whisk together the whole spelt flour, baking powder, baking soda, cinnamon and sea salt.

Mix together coconut sugar, butter, vanilla, and eggs in a seperate bowl.

Add grated zucchini to the flour mixture and mix well, coating the zucchini with the flour.

Add wet ingredients to the flour/zucchini mixture.

Add chocolate chips and mix well.

Pour batter into loaf pan.

Bake for 45 minutes or until a toothpick comes out clean.

Let cool. Serve and enjoy!

Can be eaten right away, refrigerated for later or frozen for much later!
