Another school lunch idea! I used to love english muffin pizzas as a kid, but they don’t travel well in lunch boxes because the cheese is messy so I invented the english muffin pizza sandwich! I used Dave’s Bread English muffins (homemade are on my list try, but I haven’t gotten around to it yet), marinara, shredded mozzarella, and uncured pepperoni. Assemble them like pictured, as a sandwich, so the cheese doesn’t stick to your packaging. Bake them on parchment paper (not aluminum foil like I did because they will stick!) on 350 degrees until cheese is melted and tops are golden brown. Let cool on a paper towel on top of aluminum foil that you can use to wrap for lunch. Yum! And even pre-teen kid approved.
