

School lunches are tough! They typically don’t taste good after sitting in a lunch box all morning and my kids get bored with the same thing all of the time. Our school is nut free and we don’t have microwave access. We occasionally do leftovers in a thermos or just eat turkey wraps, English muffin pizzas, or sandwiches. This however, is our newest lunch that all three of my kids enjoy. It’s a kid friendly and easy approach on the ham and cheese Hawaiian roll sandwiches with the yummy sauce on top. You can use my homemade white bread rolls for these or I also buy 365 Hawaiian rolls from Whole Foods that aren’t organic, but I figure they are close enough.
Slice entire loaf in half, put bottom layer in a 9×13 glass baking dish. Place two layers of ham (we like Whole Foods sliced ham or Boar’s Head) on bottom slice of bread, top with uncured pepperonis, then add a layer of freshly grated colby jack cheese, then place top of rolls back on. Melt a tablespoon or so of butter and drizzle on top of rolls. Bake in the oven at 350 degrees until cheese is melted and tops are golden brown. Let cool a little, then slice into individual sandwiches and let finish cooling on a piece of paper towel (to absorb some grease and eliminate a soggy sandwich) on top of the foil that you will wrap in for a lunchbox. Store in fridge. This provides my three kids a main course for two days. They are pretty delicious!
